Peanut Butter Dark Chocolate Oatmeal Cake

How did this cake come about?

On Christmas, my family and I throw a birthday party for Jesus, which is all about Him, and at a birthday party, there is always cake. With my Toddlers 3, 2, and 1-year-old, my husband and I knew that we did not want them to eat something that was too high in sugar, but we wanted them to get a chance to experience a cake, too. After days of trying to figure out the cake situation on which to buy for my toddler’s real birthday party experience, my husband asked me if I could make something healthy for them that they would like.

Challenge received!

After hearing his desire to have the cubs eat a healthy treat, which was in my heart, I knew we were in one accord, and I quickly knew what to do. Although I thought I was the founder of this cake (I am not sure if I am the only one for sure who makes it the way I make it), I knew that my toddlers loved these oatmeal cookies and oatmeal balls that I make, so I decided, “why not make their favorites into a cake?” They are toddlers and very smart, but because they are limited to sugar (which is not necessary for us to give them especially artificial genetically modified foods with addictive chemicals added to their toddler bodies), we knew that the hype of the Jesus birthday party and them just excited to get cake, that they would love it.

In the end, I can say that I have found my family’s go-to cake, which my toddlers make sure I do not overindulge in. I hope this treat is something fun that you and your children can bake together and enjoy as well.

Be sure to have:

1. Your station set up of what you will be using.

  • I promise, if you walk away to get any item you forgot to already have at your set-up station, your toddler will have a high chance of messing with anything at their level, so be aware!

2. Napkins.

3. Basic rules

  • Listen to Mommy (generally speaking), state the main safety rule pertaining to the dish (cooking time is not playing time; be cautious of surroundings like hot oven/ stove and sharp knives), and obey Mommy.

I made this into a cake, but these could also qualify as nutritional snack bars.

 

*If you make this for your toddler, I suggest you put fewer chocolate chips in it so they are not jacked up on sugar. (Mama was craving chocolate, so I added the layers for myself, which you can still do on your half of the baking dish if you want a treat for yourself!)

After I made my delicious cake weeks later, my husband sent me a video of a woman making a similar cake with added ingredients. It looked really good, so I decided to try making this dish.

Surprisingly, it was good for my toddlers, husband, and me. What I will tell you, though, is that the banana added to the dish did stand out highly, which was something I had to get used to

I assumed the measurements from the video for this recipe, so I would make it again without the chocolate chips. It can be like a morning banana oatmeal “bread” with eggs or a snack bar.

*I learned that with the banana added in this recipe, you must be mindful of the amount you make and serving portion size because it lasts only a few days at room temperature (70 degrees) or in the fridge (which can become stiff).

*Remember this dish must be consumed by day three.
